Here's a recipe that Kelly was telling me about at the gym the other day. It's for lemon blueberry muffins. The blueberries could also be substituted with any other fruit, such as cherries, apricots, apples, or pears. I will be trying these muffins as soon as I get to the store to get some blueberries. (not like I wasn't there twice this weekend) I tried out a coconut milk ice cream, and it didn't turn out tasting like I would have liked. I will have to try again and let you guys know how it turns out.

After 2 weeks of battling the never-ending-cold... the cold won, got strep on Monday. >103 fevers are not fun w a toddler. Yay.

The 60 days was definitely too long however overall I definitely like the mindset/lifestyle I think I got from it.
Finished up with a total of 251 - Not great after a perfect score on the 30 day we did in January - but, this was much easier and less stressful, and I didn't pig out on day 61 (actually pigged out on day 59 and day 60) - Regardless, with the exception of my cholesterol going up by 50 points, I do feel good - stronger, less bloated, and my clothes fit better. Also, I'm convinced that when done at about 70-80% of the time, it's do-able and doesn't have to turn you into an annoying person to be around. Good news is that I still like bread and cheese, and I'm still going to have a few beers or glasses of wine once a week.
